Noosa is now home to acclaimed Chef Peter Kuruvita’s most recent offering, ALBA by Kuruvita.

Modifying an existing restaurant and ancillary space, Noosa’s latest dining destination is a modern multi-function facility that transforms from café and pizzeria during the day into a stylish restaurant and bar in the evening. Added to this already exciting space is a providore as well as a state-of-the-art Chef’s Kitchen for cooking classes, private tables and studio for video production.

The existing restaurant had existing cooking equipment as well as extraction installed, however some changes to this were required to accommodate the new style of menu. A new pizza oven was installed along with a new Giorik Kore Compact Oven to the main line up. Additionally, the main kitchen required an overhaul of the Warewashing area which required the replacement of benching and scrapping zones as well as inlet and outlet benches to facilitate a more efficient work flow to the busy kitchen.

The major install was to the Chef’s Kitchen which was a greenfield space. This required an entire fit-out of cabinetry and equipment.

The space required a full Halton extraction system to be installed and ducted out.  This involved new ducting to the hood and changes to the existing fan system on the roof.

A Giorik Steambox combi oven combined with extraction hood was built into the rear cabinetry to provide additional support to the main kitchen. Also built into the cabinetry was an Airex Glass Door commercial refrigerator.

In the preparation line-up, a Giorik modular line-up was supplied. This includes a gas Giorik Lava Stone Char Grill, a Giorik Frytop Griddle and a Giorik 2 burner Boiling Top. Supporting the Airex Refrigerator is an undercounter Adande 2 Drawer variable temperature refrigerator/freezer unit. To complete the range of cooking equipment in the kitchen, Woodson countertop Induction Units were supplied which are also available for classes in the Chef’s Kitchen.

The new Chef’s Kitchen area is furnished with mobile Simply Stainless Benches compete with Drawer units that can be wheeled in and out depending on the need and size of the class.
