DOOLEYS is relocating its Bar and Grill concept from its now-closed Silverwater venue, DOOLEYS Waterview, to its Lidcombe HQ. The successful Bar and Grill offering, which launched at Waterview just before the pandemic hit, is now in the process of being transferred to its Lidcombe site which is currently undergoing redevelopment.
The Waterview concept at Silverwater offered high-end dining aimed at the business market, which had only distant Parramatta or the CBD as serious alternatives.
Using only fresh Australian produce in dishes created by chef Adrian Hofman, the floor was staffed by experienced FOH operators F&B Manager Gaby Tannous (ex-Crinitis, Coco Cubano) and general manager Tomasz Pytraczyk.
The DOOLEYS Waterview site closed for trade on 31 December 2022 after the sale of the Silverwater property was completed on 30 June 2022. Acquired by Marcello Colosimo’s Momento Hospitality, it has now been turned into the Silverwater Hotel featuring indoor and outdoor dining, TAB facilities, live sports viewing and a new bar.
The Bar and Grill offering at Lidcombe will be the same concept as was offered at Waterview – which included steaks, seafood and fine wines – and will be moving into the site formerly occupied by the Jade gaming space. Bar and Grill is expected to open later this year.
In the meantime, works on DOOLEYS’ major building project, The Concourse at Lidcombe, have commenced after the completion of the demolition phase by ADCO Constructions at the end of 2022.
The multi-million dollar The Concourse is part of a wider club expansion and renovation project which will affect the whole of the block opposite the train station and is expected to invigorate both commercial and retail offerings in the town centre.
But progress on the development has been slower than expected due to economic and industry uncertainty and current conditions in the construction market.
The club said the delays have had an impact on projected delivery timelines and will be “reviewing the current scope of projected works to ensure its viability”.
The club said fitout and opening details are yet to be confirmed and declined to comment further.
