As part of Cabra-Vale Diggers continued push to be a leader in the culinary landscape of south-west Sydney, it has just announced that acclaimed chef Dany Karam will be its new culinary ambassador. The partnership is the first announcement in a multi-stage redevelopment of the club.

Cabra-Vale Diggers Group is already renowned for its dining experiences, with CEO Boris Belevski leading the creation of District 8 at Cabra-Vale Diggers in 2017 – a lauded Asian Eat Street style restaurant that has been incredibly popular for the past 6 years. District 8, along with Horizon Asian Dining, have consistently drawn crowds, every day of the week.

By bringing Dany Karam on board as culinary ambassador, the club group believes it further solidifies the its position as an industry pioneer.

Dany’s involvement marks a crucial step as we build a 140-room hotel and introduce new culinary offerings – pivotal elements in our multi-million-dollar construction. This collaboration underscores our club’s progressive approach to offering unparalleled culinary experiences to our valued members and guests.”

Karam is a highly regarded chef and restaurateur with over two decades of experience. He was formerly the executive chef of the renowned BLACK Bar & Grill at The Star. He has also consulted for Oscars Hotels, and was the culinary ambassador for Australian Turf Club’s Autumn Racing Carnival in 2022.

Karam’s association with Cabra-Vale Diggers will inject a new culinary dimension into Cabra-Vale Diggers, which is poised to redefine the culinary experience within its vast expansion project, encompassing multiple stages of growth. Stage 1 of the building works is currently underway.

Under the guidance of Karam, Stage 2 of the redevelopment will encompass the launch of two unparalleled dining experiences with the creation of a 160-seat state-of-the-art steakhouse and whisky bar complete with its own in-house butchery and dry-aged full blood wagyu fridge, as well as a 300-seat Italian restaurant inspired by the interior design of Starbuck’s Reserve in Milan.

The Cabra-Vale Diggers redevelopment encompasses several new additions, including an eastern entry point with a spacious porte-cochère from Railway Parade. The new entry will be a gateway to the two new restaurants, and a new 140-room hotel tower complete with a rooftop pool and day spa, in addition to a state-of-the-art business hub and expansion of existing function rooms.
